Combat Flu Season with this Immune Boosting Soup

CREAMY CARROT AND PARSNIP SOUP

Full of beta-carotene rich carrots and hearty parsnips, this soup is great for our skin, immune system and healthy vision.

SERVES: 4
PREP TIME: 1 HOUR

INGREDIENTS

3 cups carrots
2 cups parsnips
1 onion
2 cloves garlic
1-2 tbsp fresh ginger
1 tsp cumin
1 tsp turmeric
5 cups bone broth
1 cup full fat unsweetened coconut milk 2 tbsp ghee or coconut oil

MAKE IT!

Heat coconut oil or ghee in a Dutch oven or pot over a medium heat. Add onions and garlic, and stir for a few minutes, then add carrots and parsnips. Saute for 3-5 minutes, then add broth and 1 cup of full fat coconut milk, cumin and turmeric.

Next, bring soup to a simmer and let cook for about 30-45 minutes, or until vegetables are fully cooked and tender. Then transfer to a high-speed blender and blend until smooth.

When ready to serve, reheat and top each bowl with 1⁄2 tbsp drizzled coconut milk, fresh parsley or carrot tops, and a pinch of sea salt.
