Kick off Summer with these Memorial Day Eats!

Grilled fish recipe (courtesy of obé member @ashtonkeefe!) 

Ingredients:

  • Any thicker white fish (halibut, cod, sea bass)
  • Salt and pepper the fish. Put on aluminum foil. Slather on the green sauce. Bake or grill until fish is flaky (depends on size and thickness of fish but about 10-15 mins) 

Green sauce recipe to top fish  

  • 1 bunch cilantro
  • 1 bunch parsley 
  • 1 jalapeño (deseeded)
  • 2 cloves garlic 
  • 3 tbsp olive oil 
  • 3 tbsp water (or just enough to blend)
  • salt and pepper 

Directions: combine all into a blender and pulse until consistency desired 

 

Pesto Pasta Salad 

Ingredients:

  • 1 box chickpea, black bean or lentil pasta (make pasta according to instructions rinse in cold water set aside) 
  • 1/2 -1 cup pesto depending on how much you like (recipe below, if you want to make your own!) 
  • 1 can cannelloni beans rinsed
  • 1/4 cup chopped sun dried or cherry tomatoes 
  • Parmesan cheese or small mozzarella cheese balls (you can omit if vegan) 

Directions: Mix all together and serve cold! 

 

Spinach Pesto recipe

Ingredients:

  • 2 containers basil 
  • 1-1.5 cups of spinach 
  • 1 lemon juiced and lemon zest 
  • 2-3 garlic cloves 
  • 1/4 cup Parmesan cheese (optional)
  • 3 tbsp pine nuts, walnuts or cashews (optional)
  • salt, pepper, red pepper flakes to taste 

Directions: combine all into a blender and pulse until consistency desired 

 

Sparkling Watermelon Spritzer

One of the easiest ways to make a cocktail and not have to reallywork for it is to find a flavored sparkling drink or seltzer! I was recently at Trader Joe’s and they just launched an amazing sparkling watermelon juice! Half of the can is 30 cal, low sugar and it tastes delicious –I’m pairing mine this MDW with tequila and fresh lime! 

Ingredients: 

  • 1/2 can Trader Joe’s Sparkling Watermelon
  • 1 & 1/2 oz Silver Tequlia 
  • fresh lime juice
  • lime to garnish 
  • jalapeños (optional) 

Directions: In a shaker, (I use my protein shaker, ha!) put a few ice cubes, the tequila, and a generous squeeze of lime juice and shake vigorously.  Pour over fresh new ice cubes in your glass & top with the TJ’s Watermelon Juice. Garnish with a lime. And if you want to add a kick to your drink, add a couple fresh Jalapeños to your shaker in the first step – enjoy!

Lavender French 75 

Okay, I’ll say it. I love Champagne. So second cocktail is going to be a take on a classic cocktail: French 75. I’m adding lavender to mine!

Ingredients:

  • 3/4 ounce lavender syrup (recipe below)
  • 3/4 ounce fresh lemon juice
  • 4 ounces champagne
  • 1 oz gin
  • lemon twist (for garnish)

Directions: Combine lavender syrup, lemon juice, and gin in a Champagne flute. Top slowly with sparkling wine. Garnish with lemon twist or piece of lavender.

Directions for lavender syrup: In small saucepan, mix 1 cup sugar, 1 cup water and 1 ounce dried lavender. Simmer and stir for 3–4 minutes, until sugar is completely dissolved. Remove from heat. Let cool, and strain.
